How to cook a fillet steak?  

Cooking wagyu beef is a delicate but fairly simple process.  

Follow these instructions to make sure yours comes out just right: 

  • Thaw the Steak: As your Wagyu Fillet Steak will arrive frozen, the best method is to let it thaw slowly in the refrigerator for 24 hours. Before cooking, allow the steak to reach room temperature, by sitting it out for around 30 minutes. 
  • Preheat Your Pan: Select a high-quality skillet, ideally cast-iron, for the best heat retention. Preheat the pan over medium-high heat until it's hot but not smoking. 
  • Season the Steak: A good Wagyu Fillet Steak doesn't need complex seasoning. A generous pinch of sea salt and freshly ground black pepper on all sides will suffice. 
  • Sear the Steak: Place your steak in the preheated pan, searing each side for about 2-3 minutes for a nice crust. Remember, Wagyu fillet is leaner than other Wagyu cuts, so it won't have as much fat to render out. 
  • Check the Temperature: Use a meat thermometer to check for doneness. For a medium-rare finish, which is recommended for Wagyu, aim for an internal temperature of 54°C (130°F).  
  • Let the Steak Rest: Remove your steak from the heat and let it rest on a cutting board or a warm plate for about 10 minutes. This allows the juices to redistribute throughout the steak, enhancing its flavor and tenderness. 
  • Slice and Serve: When you're ready to serve, cut the steak into slices. Slice against the grain to make each bite more tender.
